Mom Blog: Good Crockpot Recipes Will Save You Time

The cold weather and my busy schedule have urged me to bring out my crock pot.  I used my favorite crock pot cookbook twice last week.  I bought this cookbook a few years back at my child’s book fair, while I was trying to stay on my diet.  It is called FIX-IT and FORGET-IT LIGHTLY : Healthy, Low-Fat Recipes for Your Slow Cooker This crock pot recipe book bought intentionally to help me stay on my diet, but so far, the crock pot recipes I’ve tried are so good, I would eat them whether dieting or not.

A few of my family’s favorite crock pot recipes are Pepsi Pot Roast, Beef-Lite and Chickenetti.  I made Beef-Lite yesterday in the crock pot and am making Pepsi Pot Roast for tonight.  Below you will find the Beef-Lite Recipe from FIX-IT and FORGET-IT LIGHTLY : Healthy, Low-Fat Recipes for Your Slow Cooker by Phyllis Pellman Good.

Beef-Lite (Rebecca Leichty)

1 lb. extra-lean ground beef

1 pkg. dry onion soup mix

1 (10 3/4 oz.) can 98% fat-free cream of celery soup

1 (10 3/4 oz.) can 98% fat-free cream of mushroom soup

1.  Spray slow cooker / crock pot with fat-free cooking spray.

2.  Combine all ingredients in slow cooker / crock pot.

3.  Cook on low for 6-8 hours.

4.  Serve over hot rice.  (My family also likes this over no yolk noodles.)

Per Serving:  410 Calories and 12 Total Fat.

This slow cooker / crock pot cookbook calculates the nutritional analysis for every recipe.  This makes it easy to figure Weight Watcher Points if necessary.
