Low Fat Taco Soup / Salad

I love this recipe and so do my kids!  It is easy to make and enjoyed by all.  Even better, you can eat it while on a low fat diet.

Taco Salad

 Low Fat Taco Soup / Salad

Recipe from Louisiana 2nd grade teacher

 Ingredients:

  • 1 pound lean cooked ground beef
  • 1 can Ranch Style beans (w/sliced jalapeños – optional)
  • 1 can yellow whole kernel corn
  • 1 can Rotel (diced)
  • 1 pkg. Taco Seasoning
  • 1 pkg. Hidden Valley Ranch powder package

Cook in crockpot on high for 2 hours and then turn down to low anytime after 2 hrs.  Do NOT drain any cans, use all liquid.  Also, 1 cup of water can also be used to water this down if just using for soup and not for a Taco Salad.  This mixture will feed approx. 5 people at 1 cup each.  The longer this cooks, the hotter (to taste) it seems to get.

If you chosen to eat this as Taco Salad, you will also need the following:

  • Shredded  lettuce
  • 1 oz. Tortilla Chips (About 7 chips)
  • 1 cup heated mixture
  • Weight watchers Mexican shredded cheese

Taco Salad Mix

 Place the lettuce across the dinner plate, top with chips, crockpot mixture and cheese.  ENJOY!
