Trying to get my children to eat more vegetables is an ongoing process. One thing my family does when we introduce a new vegetable is tell them they must always eat 3 bites of it before they can say they don’t like/want it. The next time we have the same veggie they again must have 3 bites of it. They say you must introduce a new food 21 times before they will begrudgingly admit that they like it. 🙂 It is hard when they are little to get them to eat vegetables. It’s hard for us as moms to get them to reason (little ones have a hard time reasoning) so that they understand why they must eat it. It gets easier as they get older. Have faith mamas of young children!
Have you tried a zucchini brownie? I made them during the summer for my kids as a way to use up zucchini that had grown too large in our garden. Then my oldest son, last night, made them for us as a dessert. They are quite lovely, tasty, sweet and you have no idea there are veggies in them. My children do pretty well about eating vegetables. I’m always looking for ways to incorporate them more into their diet. You can always sneak veggies into food and not tell them. Sometimes I will make a spaghetti sauce and use my food processor to put carrots, zucchini, squash and more into it. Other times I just leave them chunky and put them in the sauce. My children know that vegetables are good for us and that we must eat them. Sometimes it’s just easier to hide them though. 🙂 Do you hide veggies to get children healthier or do you just require that they eat them? I don’t think either method is wrong. We, as moms, do what we must to get our children healthy! Have a try at the zucchini brownies and do not tell your children that they are good for them. Trust me, they won’t know!

Zucchini Brownie Recipe

1/2 c. butter
1/3 c. applesauce
1 3/4 c. sugar
2 eggs
1 1/2 tsp. vanilla
1/4 c. cocoa
1 tsp. soda
2 1/2 c. flour
1/2 tsp. salt
1/2 c. sour milk (I use regular milk and add a tsp or two of vinegar to make it sour, let sit for 4 minutes)
2 c. shredded zucchini (food processor is best)
1 c. chocolate chips
Mix together butter, applesauce, sugar. Add remaining ingredients and mix well. Pour into greased and floured 9 x 13 pan. Bake at 350 degree for 30-35 minutes.

My children love this. The chocolate chips give it a richness that a brownie needs, in my opinion. We love this recipe and sneaking in vegetables! I hope you enjoy it with your family too!
