Halloween “Carved” Pumpkin Cupcakes

Ingredients:

  • 1 Box White Cake Mix (and called for ingredients)
  • 2 teaspoons grated orange peel
  • Red & yellow food coloring
  • Vanilla Frosting
  • Black decorating gel
  • Fruit snacks, Fruit Roll Ups

This is a fun and easy recipe for you and your youngsters to make this Halloween season.  It is good for class parties, family diners, or any Halloween event!

First, heat the oven to 350°F (or 325°F for dark or nonstick pans). Place the cupcake wrappers in the pan. Use orange wrappers if you can, once you’re done it will complete the pumpkin look. Then prepare the cake batter as directed on the box. Remember to add the orange peels and six to eight drops of the red and yellow food coloring. This will turn the cupcakes into a ghoulish orange color! Distribute the batter into the cups. Bake them for 14 to 18 minutes, or as instructed on the mix box. After baking, let cool in the pan for 5 minutes; and remove them from the pan and cool for at least 10 minutes. Obviously, decorating hot cupcakes isn’t feasible; let them cool completely. Be warned: This may involve keeping small hands away from the cupcakes.

Next (or better yet, while the cupcakes are baking), take a medium to large bowl and stir together the frosting and six drops of the red food color and eight drops of the yellow food coloring, this will also turn the frosting orange. Let the kids use the resulting orange frosting to their heart’s content! They may need a little direction to put some on the cupcakes, and not eat it all!

Now it’s time to decorate! With the frosting gel, fruit snacks, and Fruit Roll Up, the possibilities are endless. Of course, if you want them to actually look like pumpkins, here’s how: With the frosting gel, make small triangles for the eyes then a square (or similar shape) for the mouth. Then find a Fruit Roll Up that’s green and tear off a small square. With a little bending (and maybe extra orange frosting for support) place it above the eyes. You now have a pumpkin cupcake!

Like all carved pumpkins, there is no set way to design them. Tell them to “carve” their pumpkin however they like, and let their imaginations run wild.
