I like this recipe, but my husband does not because he is not a fan of Stove Top Stuffing. It is easy to make and great for portion control since the muffins are made in a cup cake pan – Enjoy!
Meatloaf Muffin Recipe
- 1 lb. ground turkey or lean ground beef (My family likes beef)
- 1 package Stove Top Stuffing
- 1 chopped medium sized onion
- 1/2 cup ketchup
- 1 tsp. garlic powder
- 2 egg whites
- 1 cup hot water
Mix Stove Top Stuffing and water in a large bowl and stir with fork until moistened. Combine the remaining ingredients in another bowl, then add the stuffing to the mixture. Fill sprayed muffin tins almost to the top with your mixture.
Bake at 350 for 30 – 35 minutes
This recipe makes 12 “cup cake” sized meatloaf muffins.

Cup cake pans come in handy when you get creative:) I have seen many great looking recipes that call for cupcake pans.

These were delicious! I sped mine up with some pre cooked meat and my husband really enjoyed it.
