Bran Blueberry Banana Muffin Recipe

I love to make this recipe and it goes well with my Weight Watchers plan; however, my family hears “Bran” and they will not go near these.  That is completely fine with me because I will eat some and freeze the rest for a rainy day!

Bran Banana Muffin Recipe

1  1/4 Cup Whole Wheat Flour

3 Teaspoons Baking Powder

1/2 Teaspoon Table Salt

1/4 Cup Sugar

1  1 /2 Cup Bran Buds All- Bran (I use Kellogs)

1  1/2 Cup Post Bran Flakes (generic will work)

1  1/4 Cup Fat Free, Skim Milk

1/3 Cup Reduced Calorie Margarine

1 Egg White

2 Medium Bananas

1 Cup Blueberries

Sift together first four ingredients and set aside. ( I usually skip the sifting and just mix them up)

Measure the cereals, crumble the bran flake and pour milk over and let stand 3 -4 minutes.

Add egg, butter and bananas and beat well.

Mix in dry ingredients and stir until well combined and then mix in the blueberries.

Portion the batter evenly into 22 muffin cups and use PAM spray if you don’t use paper muffin holders.

Bake in oven 400 degrees for about 20 -25 minutes or until muffins are golden brown.  These are great for a warm breakfast and freeze well too!

Watch your oven temperature and baking time.  I have an older oven and it bakes these muffins in 18 minutes at 385 degrees so oven times and temps. definitely vary from oven to oven.
