The girls over at Mommy Edition must be gearing up for the holidays, they just sent over another great recipe for me to post on the mom blog.
Earthquake Cake
- 1 Cup chopped pecans
- 1 Cup shredded coconut
- 1 German chocolate cake mix
- 8 oz. Package cream cheese
- 4 Cups powdered sugar
- 1 Tablespoon vanilla
Grease 9 X 13 cake pan and place pecans and coconut in the bottom. Mix the cake according to the directions and pour it over the pecans and coconut. Do NOT stir.
In separate bowl, mix together the cream cheese, powdered sugar and vanilla. Beat until creamy and drop by spoonfuls over cake batter.
Cook at 350 degrees for 30 -35 minutes.
Serve with whipped cream —- yum!
