These mini muffins are easy to make and cute to serve – enjoy!
Mini Pecan Muffins
- 2 eggs
- 1/2 cup melted butter
- 1 cup brown sugar
- 1/2 cup flour
- 1 tablespoon vanilla extract
- 1 cup chopped pecans
Preheat your oven to 250 degrees.
Combine eggs, butter and brown sugar in a medium sized bowl and mix well.
Add flour, vanilla and pecans. Pour the batter into ungreased mini muffin tins.
Bake 8-10 minutes.
