July 4th Recipe: Independence Day Sundaes

I can’t believe it’s already almost the end of June! Where has this month gone? In just a couple of weeks, it will be time to bring out the fireworks and our best red, white & blue attire to celebrate the 4th of July. With the heat of summer upon us, I thought I’d give my readers a few ideas for fun and festive recipes to help make this Independence Day a little bit cooler. The best part about these sweet treats is that they are low-fat and/or low-calorie, but definitely not low on taste! Independence Day Sundae Recipe

Ingredients:

Blueberry Sauce –

  • ½ cup of honey

  • ½ pint of blueberries

  • 2 Tbsp. of lemon juice

Sundaes –

  • 2½ pints of raspberry sorbet

  • 2½ pints of low-fat vanilla ice cream

  • ½ pint of blueberries

  • ½ pint raspberries

  • Optional: mint sprigs to garnish

Directions:

Mix honey and ½ pint of blueberries in a 2-quart saucepan, and boil for two minutes. Remove from heat, and stir in lemon juice. Pour mixture in blender and purée until smooth. Let cool to room temperature, then refrigerate. While preparing the sauce, allow sorbet and ice cream to soften slightly at room temperature. To assemble sundaes, scoop about 1/3 cup sorbet into each sundae dish, then top with about 1⁄3 cup vanilla ice cream. Just before serving, top each sundae with about 2 Tbsp. of blueberry sauce and ¼ cup mixed berries. Garnish with mint sprigs. Makes approximately 8 sundaes.
