Quick and Easy Peanut Butter Cookie Recipe

I can remember my mother making peanut butter cookies for my dad when I was younger.  That was one of his favorite kinds of cookies.  I loved it when my mother made these cookies because I knew that I’d be able to “smash” the fork design into the cookie balls before they went into the oven.
The following Peanut Butter Cookie recipe was sent in by Linda Peters from Kentucky.  She made a few changes to the “Traditional Easy Peanut Butter Cookie Recipe” – Enjoy!

Linda’s Easy Peanut Butter Cookie Recipe

  • 1/2 cup sugar
  • 1/2 brown sugar {or you can use all regular sugar either way}
  • 1 egg
  • 1 cup peanut butter
Mix all together until smooth.  Make small balls and place on un-greased cookie sheet and mash flat with fork making a criss-cross pattern with a fork.

Bake for approximately 7 to 8 minutes at 350 degrees.  This a great cookie that doesn’t even contain flour, which always means a much easier clean up!  Have your children ever helped you bake in the kitchen?  Did you ever feel that more ingredients fell on the floor and all over your counter than what actually made it in your bowl or in the oven?  Cooking with kids is a great experience for everyone and also a wonderful way to spend quality time that will make memories that will last forever.

  1. The kids cook with me sometimes. I want them to know how to cook, but sometimes I just don’t feel like dealing with the messes! These cookies sound yummy. We’ve been doing a lot of baking lately. We’ll have to try them sometime! Thanks for sharing the recipe. 🙂
