Linda’s Corn Pudding Recipe

I have been thinking about new side dishes I could add to my dinner table to spice up our meals a little.   It seems like we eat the same side dishes over and over and then we all get burned out on it.  How many times do you find Macaroni and Cheese on your dinner table? I often talk to the women over at Mommy Edition about recipes and cooking so I headed over to Mommy Edition and found a great post on how to cook Spaghetti Squash.  It tells how Spaghetti Squash can be used for four different interesting recipes.  Have you ever heard of Maple Syrup Baked Spaghetti Squash or Roasted Spaghetti Squash Soup?  I think my family would like the Spaghetti Squash and Ricotta Stuffed Ravioli, does that one sound good to you?
After finding these dishes, I checked in with “Recipe Linda” and she suggested Corn Pudding.  Here’s her recipe, do you think this would be a good addition to your dinner table?  She said that this is one of her favorite side dishes, so I thought I’d share it with you and then give it a try in my kitchen.  Linda says it is very easy to make and that it goes with almost any meal.

Corn Pudding Recipe

  • 1  can whole kernel corn  drained
  • 1 can cream style corn
  • 1 pkg corn muffin mix {Linda uses Jiffy brand} whatever you prefer
  • 1 cup sour cream
  • 1/4 cup melted butter
  • 3 eggs

Mix all ingredients together and spoon into a 13 x 9 inch greased baking dish.  Bake at 375 degrees for 35 to 40 minutes or until brown.  Enjoy!
