Strawberry Shortcake Recipe That Anyone CAN Make

My dad raised strawberries when I was growing up and my mom always made the best Strawberry Shortcake.  Now that I am married and have kids, I use this same Strawberry Shortcake recipe for my husband.  This is one of his absolute favorite desserts!

Strawberry Shortcake Recipe

You will need:

  • 2 pounds of strawberries
  • Sugar
  • Yellow cake mix
  • All ingredients called for on the yellow cake mix box
  • Vanilla ice cream

I use at least 2 pounds of strawberries, but you could always use more if you are having a big crowd over.  Make sure to remove the core from the strawberries and rinse them off.

Next, slice your strawberries and place them in a container.  The more juice you get, the sooner your strawberry topping will be ready.  A potato masher or a masher as shown above works great, but if you do not have those available, then use a fork.  I add a lot of sugar, just keep taste testing until you hit the sweetness you are looking for.

Strawberry topping is done now, so place it in the fridge until you are ready to use the strawberry topping with your dessert.

Here’s the shortcake, so simple, just use your favorite box of yellow cake mix and follow the cake mix directions.

Once the yellow cake has cooled, you can start layering your desert when you are ready to serve it.  Tear up the cake and place on the bottom, followed by ice cream, then strawberry topping.  Keep repeating the layers until the bowl is full.  Using a smaller sized bowl, makes a great presentation without the added calories, but my husband isn’t worried about calories when it comes to this dessert!

Now your Strawberry Shortcake dessert is ready to be served.  This dessert never hangs around my house more than two days, but if you have left over strawberry mixture, feel free to freeze it for another day.  Enjoy!

  1. You are the only other person I’ve ever seen that makes Strawberry Shortcakes the way we do! We vary on the cake from time to time but we always macerate the strawberries in sugar! Everyone else I know uses that yucky strawberry gel.

    You can’t beat this strawberry shortcake method. It is Heavenly!!!

      Where did you grow up? Maybe this is a “location” issue – I was born and raised in Kentucky and no one in my family has ever used strawberry gel, only the “real” stuff.

      1. OMG! I’m central Kentucky born and raised!!! We still live here. It must be a Kentucky thing then.
        My mom and grandmother always made theirs with just strawberries and sugar. My mom would buy the little round shortcakes or just make a yellow cake. Top with a scoop of vanilla ice cream, the strawberry mixture and sometimes a dollop of whipped cream. I make them like this for my kids too.

        1. That is TOO funny! We also bought the small round cakes, but now I am too cheap so I make the cake instead! I grew up in Princeton and went to college at Murray State University and now I live in Texas.
