Above you will see the ingredients needed for one of my families favorite recipes:  Pepsi Pot Roast.  The recipe comes from the book in the picture:  Fix-It and Forget-It Lightly.  It is super easy to throw together and it tastes great with potatoes or rice.

Here’s the recipe above, straight from the recipe page.  As you can see, I like to take notes in my recipe books in order to remind myself if the recipe is a keeper or if I need to stay away from that one in the future.  As far as my notes go, I need to update these a little.  Now that my oldest son is 14 and very active in sports, I definitely need to buy the larger sized roast and I have also found that Coke Zero works well this recipe too.

Here’s a shot of the Pepsi Pot Roast when poured over two pieces of bread.  My mother grew up in Michigan and this is how she always served her roast, so why break a great tradition?  Do you have a favorite dish that is easy to cook and loved by everyone of your family members?  If you do, be sure to make it more often!  There are so many dishes that I like but do not make very often because of the fact that not everyone likes it like I do.  With such hectic lifestyles, it is just easier to cook what everyone likes without the need for additional food or having to deal with the complaints.

Healthy family meals are definitely the way to go, especially if they taste great and are easy to prepare.  What is your favorite family meal based on preparation and taste?  How often does your family request that you make that meal?
