Sweet Potato Fries & Kale Chips Recipes

Yesterday when scanning through my Facebook thread, I came saw a lady posting about grilling Sweet Potato Fries.  I asked her if she had a recipe that she could supply me with so that I could post it on my blog.  She was so nice to respond with a quick reply for me.  She even included a recipe for Kale Chips as well – enjoy


Kathy’s Sweet Potato Fries
Slice the sweet potato fries rather thick and toss in a bowl with a couple Tablespoons of olive oil.  Cutting your fries in wedges and not skinny fries, will help keep them from burning.  Next, sprinkle the fries with coconut sugar or brown sugar and place them on foil and cook on your grill.  They are delicious this way!
These Sweet Potato Fries can also be made in the oven.  Follow the same directions as above, heat your oven to 350 degrees, and bake the Sweet Potato Fries for about 15 minutes.


Kathy’s Kale Chip Recipe

If you have never tried Kale Chips, you must make some.  They are delicious, here’s my recipe:
Get a bag of curly kale, the organic kind.  Put the curly kale into a large bowl and drizzle a small amount of olive oil onto it.  Next, massage the olive oil into each leaf.
Lay the kale on a cookie sheet in a single layer and bake on 350 for about 12 min or so.
You want to cook the kale until it is crispy but not too brown. The last few min. of the cooking time,  sprinkle the kale chips with Parmesan cheese.
As I was responding back and forth with Kathy on Facebook, I was taking notes so I could share her recipes.  This morning as I was putting everything together, I received an email from Mommy Edition containing a link to her favorite Sweet Potato Fries recipe where you can see step by step how she makes her fries.  I guess I have to get rolling and try my hand at Sweet Potato Fries since I now have multiple recipes to check out.  Enjoy!
