Recipe: Hearty Spinach Pancakes with Tart Berry jam

I have many magazines that come to my home on a regular basis that offer great recipes.  I came across a recipe for Spinach Pancakes With Tart Berry Jam in the Living Magazine and had to share it.  I do try to add Spinach into my diet where I can, but it hadn’t ever crossed my mind to try adding Spinach into my pancakes.  Have a look at the recipe.  Do you think it would get your families seal of approval?

Spinach Pancakes With Tart Berry Jam Recipe

This recipe makes approximately 2 servings.  Due to the addition of Spinach, these pancakes will appear green in color.

You will need the following ingredients for this recipe:

  • 1/2 cup of fresh baby spinach (pack this into the measuring cup)
  • 1 1/2 cups of milk
  • 1 egg
  • 1/4 tsp. of salt
  • 2 Tbs. of whole wheat flour
  • 2/3 cup of all purpose vegetable oil
  • butter or oil to be used for frying
  • Choose a tart berry jam for toppping off your pancakes.  A few great choices are lingonberry, cranberry or gooseberry jam

Before you begin mixing up this recipe, make sure to wash your baby spinach.  Use a blender to puree the baby spinach with half your milk.  Next, add in the rest of the milk, egg, salt, four & oil, then mix into a batter.  Warm up a frying pan with either butter or oil and fry your pancakes on both sides for a couple of minutes each.  My kids love smaller sized pancakes.  You can get creative and make pancakes of all sizes while creating these fun pancakes.

These green colored Spinach Pancakes are to be enjoyed warm and topped with your favorite tart berry jam or even served up with honey.
