Dorito #Recipe: Mexican Casserole


Here’s a recipe for a Mexican Casserole that was sent in by Linda Peters.  She’s a great cook, so I’d highly suggest that you give it a try.  It’s definitely on my to-do list for new recipes to try on my family.

Before you get started, go ahead and preheat your oven to 350 and double check that you have all the ingredients needed for this Mexican Casserole recipe.

You will need:

  • 1 1/2 lb. ground beef
  • 1 onion chopped                                       
  • 1/2 can water
  • 2 cans Ro-Tel tomatoes
  • 1 [8 oz] pkg.Doritos [Nacho]
  • 1 can Cream of Mushroom Soup
  • 1 c. Cheddar cheese, grated

Get Started:

First you need to brown the hamburger and the onion.  Once that is done, make sure that you drain the fat from this mixture. 

Next it is time to add the soup, water and tomatoes to the hamburger mixture.  Simmer everything for 5 minutes and then add the Doritos to skillet and cook this until it is soft.

Pour this into a 9 x 13 casserole dish and then top this with cheese and bake the casserole until it is well browned. 

Lighten it Up:

If you would rather lighten this recipe up a little, you can do this by using lean ground meat or substitute it with chicken or turkey.  You can also use fat free Cream of Mushroom Soup and Low Fat Cheddar Cheese if you’d like.

Enjoy this Mexican Casserole, it would also make a great dish to take along next time you are asked to bring food to a get together.
