Seasonal Fruits And Vegetables To Eat This Spring

Fruits and vegetables are not only good for the body, but they also taste better when they are freshly picked and have more antioxidants!  Here are some things to look for in the produce section this spring, and ways to enjoy them:

Strawberry shortcake layer

Berries – It’s berry season! Strawberries and blackberries are especially good this time of year and are delicious a million ways. Drop them on top of your yogurt, pancakes, muffins, ice cream or just straight in your mouth! As it gets warmer outside they are especially good after an hour or two in the freezer.  Try out our Strawberry Shortcake recipe, we just made that this weekend and it’s always a huge hit.  It’s easy to make and tastes great going down!

Sweet Potatoes – These are another sweet choice that can take more of a central role in a meal.  Sweet potato fries, loaded fries, and casserole are some of my favorite indulgences, but they can also be uber healthy simply roasted with some olive oil and spices!

Beets – You can’t beat beets! Every ounce of their intense color is packed with vitamins B and C, not to mention you can get your daily calcium intake too if you pair them with goat cheese.  It’s one of the best combinations!  You can also simply roast them, throw them in a salad, or even pickle them!

Green Beans – Finally, the classic green bean is in season during the spring!  This vegetable can sometimes be overlooked, but this time of year it is especially fresh and tastes great as the weather heats up.  I like to cook mine with almonds and ginger butter for a super flavorful and fresh side!  Any way you like to eat these spring fruits and vegetables your body and taste buds will be happy!
