If you are a fan of blueberries and coffee cake, this is a great recipe. This blueberry coffee cake is very easy to make and has become a huge hit at your house. It’s also a great dessert to have around when company is coming.
I received this blueberry coffee cake recipe from my Aunt Linda who lives in Kentucky, she’s such a great cook, I refer to her as “Recipe Linda!” Enjoy the recipe everyone!
Blueberry Coffee Cake Recipe
- One package of yellow butter cake mix
One 8 oz package of cream cheese softened
1/2 cup vegetable oil
3 eggs
2 cups fresh blueberries ( I use frozen and no one can tell difference)
Mix the cake mix package, cream cheese, vegetable oil and the eggs together until they are well mixed. Next, fold in your blueberries. Pour your recipe mixture in a 10 cup tube pan and
bake at 325 for approximately one hour. Since oven temperatures can differ, be sure to watch your cake and pull it out of the oven when its’ time. The recipe calls for an hour cooking time, but my oven requires a little extra time.

The guys over at Micro Scooter wrote into the mom blog so say that they tried this recipe and it was a hit in their break room.
