Gardening Season Has Arrived!

It is finally garden season! All of our fruits and vegetables are beginning to show and our number one ‘grower,’ zucchini, is making its famous appearance again. I say famous because they are EVERYWHERE! What can a person do with 98434 zucchinis?? Well, let me tell you! Growing up, my mom would always pull at least 15 zucchinis from her garden a day. Yes, 15 a day! This was a secret to us, though, until we were much older. We actually ate so much zucchini hidden in other foods and we did not even know it. We had a lot of zucchini brownies. It may sound weird, but you should try it! All you need to do is add shredded zucchini to your brownie mix and cook it regularly. You will not even taste the zucchini. We ate zucchini brownies for years and had no idea!

Something I like to do with all of the zucchini my mom gives me is to chop it up into small pieces and freeze sandwich-size baggies of it and just pull it out of the freezer as needed and add it to a meal. My husband loves chili so I will oftentimes make a few gallon-sized chili meals (with tons of zucchini) and throw them in the freezer for a day that I do not have time to cook. I will then just pull them out and put it in the crockpot for a few hours and dinner will cook itself! Crockpots are wonderful for zucchini meals. Plus, they are much cheaper than hiring a personal chef.

You can also add zucchini to corn chowder or any other soups you might make from scratch. It is such a great filler piece! I also like to grill mine with some chicken or salmon. What do you do with zucchini?
