Comfort Food Recipe: Mashed Potato Bowl

I have been spending a lot of time cooking lately in order to stay away from all the fast-food restaurants. In order to save money I have also been trying to use all the ingredients that I have presently in the house in order not to waste food that will go bad if not used soon. Here’s a recipe that I came up with that’s so easy to make and tastes SOOOOOO good! Make this recipe for your family and they’ll be impressed!

When making this recipe I like to have leftovers to carry for lunch. These 3 cup freezer safe containers shown in the picture above are the perfect portion size. In order to ensure leftovers when cooking for two people, I use the following………..

Mashed Potato Bowl Ingredients:

  • 1/2 bag of Russett Raw Potatoes
  • 1/4 Cup Shredded Cheese, use as desired before serving
  • A Can of Corn
  • 1/4 of the Bag of Frozen Popcorn Chicken
  • 1/8 Cup Milk, use as desired for mashed potatoes
  • 1/4 stick of butter, use as desired for mashed potatoes
  • Salt & Pepper, use as desired
  • Gravy (two packets of brown gravy mix)

This recipe is super easy. I’d call it a stove top “dump” recipe. It’s definitely on my list of favorites!

Mashed Potato Bowl Preparation:

  • Peel the potatoes and boil them on the stove.
  • Cook the can of corn on the stove.
  • Bake the popcorn chicken in the oven.
  • Prepare mashed potatoes as usual adding in milk and butter as needed.
  • Prepare the gravy and keep warm.
  • When mashed potatoes, corn and popcorn chicken are ready, drain the liquid from the corn and mix everything together. Sprinkle shredded cheese on top and add salt and pepper to taste.

Now you’re ready to eat, serve the mashed potato mixture and add gravy on top as desired. This meal is great alone or served with Hawaiian Rolls or garlic bread.
